Creamy Macaroni and Cheese

I got this recipe from the Food Network website (link).  I didn’t follow the directions exactly as you see them below.  Here are the changes I made to the recipe: instead of three eggs I used just one, and instead of using a slow cooker I baked mine at 375 degrees for 45 minutes. It was excellent!

2 C. uncooked elbow macaroni
4 T. (1/2 stuck) butter, cut into pieces
2 1/2 C. (about 10 ounces) grated sharp Cheddar cheese
3 eggs, beaten
1/2 C. sour cream
1 (10 3/4-ounce) can condensed Cheddar cheese soup
1/2 tsp. salt
1 C whole milk
1/2 tsp. dry mustard
1/2 teaspoon black pepper

Boil the macaroni in a 2 quart saucepan in plenty of water until tender, about 7 minutes. Drain. In a medium saucepan, mix butter and cheese. Stir until the cheese melts. In a slow cooker, combine cheese/butter mixture and add the eggs, sour cream, soup, salt, milk, mustard and pepper and stir well. Then add drained macaroni and stir again. Set the slow cooker on low setting and cook for 3 hours, stirring occasionally.

Southwestern Chicken Pizza

This recipe comes to you from Erin Carlson.  Erin and her husband Erik (Chuckie) hosted our annual New Year’s Eve Olympics this past year.  It’s a weekend where we play a bunch of boardgames and eat lots of food.  This particular recipe came out of that weekend.  It was delicious and appeared to be an easy dish to make, but that’s easy for me to say as I was only the taster.  Good stuff, thanks Erin!

1 medium onion
1 medium green pepper
1/4 C. water
2 (10 oz. ) tubes of pizza crust
1 1/4 C. salsa
2 pkg. (6 oz) southwestern chicken strips
2 C. shredded Mexican cheese
1/4 tsp. Garlic powder

In microwave, combine onion, pepper and water. Cover and cook 2-4 minutes on high until crisp-tender.  Drain well.

Unroll pizza crust onto greased 14 x 10″ pan.  Spread with salsa.  Top with chicken, onions, peppers and cheese.  Sprinkle with garlic.

Bake 400 degrees for 15-20 minutes.

Spaghetti Hotdish

A friend of ours from church shared this delicious recipe with us. I am not a big leftover fan, but this dish was excellent heated up the next day, and the day after that!!!

Spaghetti Hotdish

12 oz. spaghetti, cooked and drained
1 – 1 1/2 lb. hamburger
16 oz. sour cream
Large jar spaghetti sauce
2 C. Mozzarella cheese
3/4 C. Parmesan cheese
2 eggs

  1. Spray 9×13″ pan
  2. Put spaghetti in pan
  3. Mix eggs and Parmesan cheese
  4. Pour egg and Parmesan cheese mixture into spaghetti
  5. Layer hamburger, sour cream and then spaghetti sauce
  6. Sprinkle Mozzarella cheese on top

Bake 350º for 30-40 minutes.

Tortellini with Peas and Tarragon

I got this recipe in the magazine Real Simple. It was fabulous!

Tortellini With Peas and Tarragon

1 lb. frozen cheese tortellini
2 T. olive oil
1 onion, chopped
3 T. unsalted butter
2 cloves garlic, finely chopped
1 1/2 C. frozen peas
Kosher salt and pepper
2 T. chopped fresh tarragon
1/2 C. grated Parmesan

Cook the tortellini according to the package directions. Meanwhile, heat the oil in a large skillet over medium heat. Add the onion and cook until soft, about 6 minutes. Increase heat to medium-high. Add the butter and cook until it turns golden brown, about 3 minutes. Stir in the garlic, peas, 1/2 teaspoon salt, and 1/4 teaspoon pepper and cook until heated through, 2 to 3 minutes. Add tortellini, tarragon, and half the Parmesan and toss. Divide among bowls and sprinkle with remaining Parmesan.

Chicken wrapped in Ham & Cheese

A friend of ours from church brought this dish over after Liza’s surgery. It kind of reminds me of a chicken cordon bleu. She said it was a family favorite and it turned out to be a hit with our family as well, including the kids. You can’t beat that.

Chicken wrapped in Ham & Cheese

1 pkg. boneless chicken breasts
Thin sliced cooked ham (Deli style)
Swiss cheese
1 can, cream of chicken soup
8 oz. sour cream
Dash of Worcestershire
8 oz. shredded mozzarella

  1. Slice chicken breasts in half
  2. Wrap a slice of ham around each chicken breast
  3. Wrap a slice of Swiss cheese around the ham
  4. Lay in a 9×13″ glass pan

SAUCE

  1. Mix the cream of chicken soup, sour cream and Worcestershire together and pour over the chicken wrapped in ham and cheese.

Bake at 350º for 1 hour. Take out and spread shredded mozzarella on top of chicken and bake for an additional 10-15 minutes or until golden brown.

The sauce in the dish is great poured over baked potatoes or broccoli. Can be made a day in advanced and can also freeze. This dish makes for wonderful leftovers!

Lois R’s Favorite Beef Burgers

2 lbs. ground beef
Onion
Salt
1 can Campbell’s vegetable beef soup
Mustard
Ketchup
Oatmeal

Brown beef with onion and salt. Add soup, mustard and ketchup (approximately 1/4 cup). Scant oatmeal to thicken.

Coke Sloppy Joes

1 lb. hamburger
1 can Classic Coke
1 C. ketchup
Green pepper, chopped, optional

Brown hamburger; drain grease. Add Coke and ketchup and let simmer to reduce liquid. You may add green pepper to taste, This is an easy recipe but it can’t be made in 15 minutes because it takes a while to reduce down.

Supper On A Bread Slice

French bread
2/3 C. evaporated milk
1 1/2 lbs. ground beef, browned
1 C. saltine cracker crumbs
1 egg
Radishes, sliced 1/4″ thick
1/2 C. onion, chopped (fry with ground beef)
1 T. mustard
1 tsp. salt
1/8 tsp. pepper
2 C. American cheese, grated

Combine above ingredients and set aside, Cut a long loaf of French bread in half lengthwise. Spread mixture over cut side of bread. Wrap in foil leaving top open. Put on cookie sheet. Bake 25 minutes at 350º. Cut and serve.

NOTE: Can freeze or may make one day and bake the next day.

Hot Dog Wrap-Ups

This recipe comes from an old Better Homes and Gardens Junior Cookbook. We used to love making them when we were growing up. Emily and I still get hungry for them and make them for lunch occasionally.

2 T. butter or margarine, softened
4 slices bread
4 slices American cheese
4 hot dogs

Spread softened butter or margarine on one side of each piece of bread with a table knife. Put buttered-side down on a baking sheet. Put a slice of cheese on each bread slice. Put a hot dog diagonally across each slice of cheese. With adult’s help, turn on the oven to 375°. It will start to get hot. Fold the 2 opposite corners of the bread over each hot dog. Push 2 wooden picks through the bread and into the hot dog to keep the corners around it. With adult’s help, put the baking sheet into the oven. Bake until bottoms are golden brown. This will take about 10 minutes. With adult’s help, remove the baking sheet. Turn off the oven. Use pancake turner to put hot dogs on plates.

Makes 4 sandwiches.

Pop-up Pizza

SAUCE:
1 1/2 lbs. hamburger
1 C. green pepper, chopped
1/2 tsp. oregano
1/2 C. water
1 – 15 oz. can tomato sauce
8 oz. mozzarella cheese
1 C. onion, chopped
1 clove garlic, minced
Dash of salt
1/8 tsp. Tabasco sauce
1 env. Lawry’s spaghetti sauce mix

CRUST:
1 C. milk
1/2 tsp. salt
1 C. flour
2 eggs
1 T. oil
1/2 C. Parmesan cheese

Brown beef; drain. Combine all of the sauce ingredients, except cheese, and simmer for 10 minutes. Place in a 9×13″ pan. Add cheese. Prepare cheese. Prepare crust by combining milk, oil and eggs. Add flour and salt; beat. Pour over meat and cheese.
Sprinkle with Parmesan cheese. Bake at 400° for 25 to 30 minutes.
