Jean’s Cheese Spread

This recipe comes to the Bartholomew family from Jean Riordan, Leta’s mother-in-law.

1 lb. Velveeta cheese
1 small jar sweet pickle relish, juice and all
6 hard-boiled eggs
2 rounded T. Miracle Whip
1 T. sugar

Put everything in mixing bowl, except eggs. Mix with electric mixer until blended and fluffy. Add eggs and mix until eggs are the size you want. If too thick, can add more Miracle Whip. Have at room
temperature to spread.

NOTE: Aunt Jeanette really likes to use this spread to make grilled cheese sandwiches.

Salad Dressing

1 C. sugar
1 T. cornstarch
11 oz. apricot nectar
1 tsp. vanilla

Mix together sugar, cornstarch and nectar until smooth. Microwave 6 to 8 minutes, stirring every 2 minutes. Cook until thick; add vanilla. Cool and refrigerate until ready to serve. Drizzle over fruit salad.

Radish Sandwich

This is the only way Lois could eat radishes when she was young.

2 slices fresh white bread
Mayonnaise or butter (Aunt Dee uses butter)
Radishes, sliced 1/4″ thick

Smells of Christmas

Mabel Holdiman gave me this recipe. If I was not making percolator punch, which also makes the house smell great, I would make this and keep it on the stove. Remember that this was before candles and potpourri were everywhere.

1 C. pineapple juice
1 C. water
3 cinnamon sticks
1 tsp. whole cloves
1 tsp. ground ginger
1/2 tsp. pickling spices

Bring to a boil. Add water from time-to-time.

Healthy Remedies

FOR KIDNEYS:

1 lemon, sliced very thin
1 T. sugar
1/2 tsp. cream of tartar
1 pt. boiling water

Take 1/2 cup at bedtime.

FOR COUGHS:

5 onions
1/3 lb. brown sugar
1/3 qt. warm water

Boil 1 hour until it syrups, then strain. Add juice of 1 lemon and 3 teaspoons honey. Take 2 teaspoons morning and night.

EGG NOG FOR THE SICK:
Beat yolk of 1 egg very lightly. Add white of egg beaten also, and then beat the 2 together. Add 2 or 3 teaspoons sugar and beat again. Then add 1 glass of rich
milk and a pinch of nutmeg. Stir well.

FOR PNEUMONIA OR BAD COLD ON CHEST:

1/2 C. vinegar
1/2 C. water
1 T. salt
1/2 C. onion, cut fine
1 T. Crisco

Cook until very hot. Stir into sifted flour slowly to make a poultice. Add 1 teaspoon mustard and 1 teaspoon baking soda. Spread between cheesecloth and lay it on chest, covering from neck to stomach, for 4 hours or overnight. Keep hot with flannel covered over it. Keep warm all night. May use a heating pad on real low.

Cupcake Filling

2/3 C. white Crisco
1/2 C. sugar
1/3 C. evaporated milk
1/4 tsp. salt
1/2 tsp. vanilla

Beat 10 minutes at high speed. Add 1/2 cup powdered sugar and beat until mixed. Put filling into a pastry bag and use icing tip to fill cooled cupcakes. This recipe easily fills cupcakes from 1 cake mix. Do not overfill or the cupcake will split.

Judy’s Butter Cream Frosting

Wonderful!

1/2 C. margarine
1/2 C. shortening
1/8 tsp. salt
1 1/2 tsp. vanilla
5 C. powdered sugar
1/4 C. + 1 T. milk
1/2 tsp. almond extract (if making for Deluxe Sugar Cookies)

Beat ingredients together. Makes 3 1/2 cups frosting.

Ice Cream Topping

This was my Grandma’s recipe that everyone loved.

1/4 C. butter
1/3 C. cream
3/4 C. sugar
1/4 C. cocoa
1/2 tsp. vanilla

Mix and boil 1 minute. Pour over ice cream.

Pie Crust

This recipe I got from Cindy Staley. Her and Aunt Elaine were the matchmakers for us, Uncle Jim and Aunt Jeanette. I had never made a pie before I was married and Cindy gave me this recipe and I have made several pies since. It is so easy. You will love it.

2 C. (scant) flour
1 tsp. salt
1/2 C. Wesson oil
1/4 C. water

Put the water in a measuring cup and add oil to make 3/4 cup; add to flour. Mix and form ball. Divide in half. To roll out, place a ball between 2 pieces of wax paper and roll with rolling pin. Remove 1 side of wax paper and put crust in pie pan. Add pie filling and put the other crust on top. Enjoy!

Aunt Elaine’s All Time Favorite Childhood Meals

JELLY AND MILK SANDWICH:

This is a great baby food substitute, that’s what Aunt Leta and Aunt Dee told us. Aunt Leta says not a substitute, but a good baby food, period.

1 slice white bread Grape jelly
Milk

Put the slice of white bread on a dinner plate topped with grape jelly. Cover with white milk. Enjoy.

BROWN SUGAR SANDWICH:

Aunt Marcia loves this one, too.

2 slices white bread
Butter
Brown sugar

Spread butter on bread, top with brown sugar, Cover with hand and press together, Delicious!

FAVORITE BREAKFAST:

If you don’t see sugar on the bottom of the bowl when the Wheaties are gone, you did not have enough sugar.

1 large bowl Wheaties
Lots of sugar
Milk

Put Wheaties in bowl; add sugar to taste and cover with milk.
