Roasted Pumpkin Seeds

I found this recipe on the Simply Recipes website.   The flavor was fantastic, however we over baked them a tad so some of the seeds had a little burnt flavor.  The picture shows a browned pumpkin seed, I would recommend watching them closely, especially if your oven runs hot.

One medium sized pumpkin
Salt
Olive oil

  1. Preheat oven to 400°F. Cut open the pumpkin and use a strong metal spoon to scoop out the insides. Separate the seeds from the stringy core. Rinse the seeds.
  2. In a small saucepan, add the seeds to water, about 2 cups of water to every half cup of seeds. Add a half tablespoon of salt for every cup of water (more if you like your seeds saltier). Bring to a boil. Let simmer for 10 minutes. Remove from heat and drain.
  3. Spread about a tablespoon of olive oil over the bottom of a roasting pan. Spread the seeds out over the roasting pan, all in one layer. Bake on the top rack until the seeds begin to brown, 10-20 minutes. When browned to your satisfaction, remove from the oven and let the pan cool on a rack. Let the seeds cool all the way down before eating. Either crack to remove the inner seed (a lot of work and in my opinion, unnecessary) or eat whole.

Sue’s Chex Mix

This recipe Sue always served at card club. This would be good for MAD Week-end, a trip to Grandma’s house or anywhere for that matter. You must try!

8 C. crispy Chex mix
2 C. nuts (I use 1 can mixed and 1 can cashews)
1/2 C. butter
1 C. brown sugar
1/4 C. light Karo syrup
1/2 tsp. salt
1/4 tsp. baking soda

Combine the last 4 ingredients; bring to a boil for about 2 1/2 minutes, stirring constantly. Remove from stove and add 1/4 tsp. baking soda. Grease jelly roll pan or roaster. Pour Chex mix and nuts in pan. Pour syrup mixture over mix and bake at 225º for 1 hour, stirring every 15 minutes. Spread mix on wax paper to cool.

Cheesy Chex

1/4 C. margarine, melted
1/4 tsp. paprika
4 C. Corn or Rice Chex
1/4 C. powdered American cheese (gold can like Parmesan)

Mix margarine and paprika in 9×13″ glass dish. Pour in Chex and stir to coat well. Sprinkle on cheese. Stir again, Microwave for 4 minutes, stirring 2 to 3 times,

Chex Mix

(BIG BATCH)

9 C. Corn Chex
9 C. Rice Chex
9 C. Wheat Chex
3 C. nuts
6 T. Worcestershire sauce
1 tsp. garlic powder
2 sticks butter (can use margarine, but butter is better)
3 C. pretzels
1 tsp. onion powder
4 1/2 tsp. Lawry’s seasoned salt

Mix and put in 250º oven for 1 hour, stirring every 15 minutes.
